Homemade Chocolate Ice cream


Ingredients

1 Kg Milk
4 tsp Cornflour
1 tsp Gelatin
2 tsp Cms powder
2 tsp Gms powder
50 Gms Cooking chocolate
1 cup Sugar
1/2 cup Water
1/2 cup Cream (Malai )
















Method




Boil milk for 8- 10 mins. Dissolve cornflour in little milk (at room temp) and add in boiling milk. 
Bring to boil again keep string. let it rest for 10 mins.









Sprinkle gelatin, cms and gms powder over water and mix well.










let boiled milk rest for 10 mins now add broken chocolate chunks and Malai. 









Add sugar, dissolved gelatin, Cms and Gms in the mixture. Churn in liquidizer . 




Pour in plastic bowls with lid. Keep in deep fridge for 4-5 hours or till it is done.

Serve with added walnuts or choco chips.

Chocolate Souffle


Ingredients

3 Eggs (separated)
2 cup Whipped cream
3 tbsp Gelatin
2 tbsp Caster sugar 
1/2 cup Water
50 gm Dark Chocolate





















Method




Take a bowl, add gelatin dissolve it in water and then heat it for 30 secs in microwave or over medium flame in double boiler.

Whip egg whites till it form peaks.






Mix sugar and egg yoke. 

Mix molten chocolate in it and stir in dissolved gelatin. 







You can keep this bowl in another bowl with warm water so that temperature of this mixture is warm while mixing in the ingredients. 






Fold gelatin mixture in whipped egg whites. 

Then mix cream very gently.







Transfer it in a tin (2 1/2 inch) keep it in the refrigerator for an hour to set.


Now put it in hot water in a bowl for few secs to unmould .

Decorate it with chocolates.

Apple Jaggery Stew




Ingredients

6 Apples
3/4 cup sugar
60 gm Jaggery
3 Cinnamon sticks
1/2 Lemon
2 tbsp Malai or Amul (Cream)














Method





Peel and cut apples into thin slices. 

Take a 4 inch microwave dish keep the slices in the dish and add cinnamon sticks.








Microwave it for 5 mins. Can be cooked for 7 mins. 

Keep stirring in between.









Let it rest for 5-8 mins. 

Then remove cinnamon sticks and cover apples with cream or malai.








Garnish it with the same cinnamon sticks which we have removed previously.

Serve hot or cold.





Note - You can replace apple with Peach, Strawberry or Nashpati (Bartlett is the juiciest pears)

Aam Panna
(Throughout the year)



Ingredients

Mango Pulp 1 kg
Sugar 2 kg
Water 1 kg
Salt 60 gm
Black pepper 10 gm
Zera 25 gm
Pudina extract 4-5 Bunches
Lemons 5-7 nos









Method




Wash and peel mangoes. Remove all the pulp. Cook the pulp with salt only. Keep aside to cool.

Wash pudina leaves, drain them and spread on a cloth.







Boil zera and pepper in 1/2 Lt of water for 10- 15 mins so that water becomes almost half. Churn this water and strain through muslin cloth.

Add remaining 1/2 kg water to this extract to make it 1 kg of water. 

Add pudina leaves to some of this water n churn. Now strain through muslin cloth.





Add sugar to the remaining water n bring it to boil, stir continuously. Blend mango pulp. 

Now we have pudina extract water, sugar syrup n mango pulp. Strain all the three through wire strainer and add lemon juice stir till completely mixed.

you can mix it in the liquidizer also.





Note: 



It can last for 2-3 months if kept in the fridge.

For preserving it for an year mix 1 tsp of potassium meta-bi sulfate and store in sterilized glass bottles n air tight.

If preservative added do not open for 10-15 days.

Clean mango with clean cloth.


Add pudina leaves in boiling water.

Baked Spinach



Ingredients

200 gm Spinach (Palak) (ruffly chopped)
1 Onion (Chopped)
1 tsp Ginger paste
1 tsp Garlic paste
Salt & Pepper to taste
4 tbsp Cream
2 tbsp Flour (Aata)
1/2 Cup Milk
50 gm Butter
















Method





Clean spinach thoroughly. Remove all excess water. Chop spinach.

Heat butter saute chopped onion add ginger, garlic paste.

Then add spinach and again cook for 3 min. 

Now add salt n pepper.







Let it rest till it cools down a bit n then grind in the mixer. 

Add flour (Atta), milk and half of cream grind again. 

Transfer it to the dish and bake in oven at 200 degree for 30 min.










Garnish with remaining cream.


You can serve it with chapati and toast.

   Dates & Nutty Soda Bread (Eggless Cake)



Ingredients

1 Cup Dates
1 Cup Water (Hot)
1 Cup Sugar
2 Lemon ( juice n lemon rinds)
1 Cup Oil
3 Cups Flour
1 Cup Powder Milk
1 tsp Khane ka Soda 
1/2 Cup Nuts (Cashew, Almonds, Raisins, walnut)  
(chopped)














Method



Leave dates in hot water for an hour. Mash dates in water add lemon juice, sugar and lemon rinds mix well. Add oil in this mixture.
Mix all dry ingredients together. 

Pre heat the oven to moderate temp (230 degree).







Take one nine inch or 3 three inches tin -grease them.

Mix date mixture in dry ingredients just before ready to bake. If your mixture is thicker than falling consistence add water . 








Bake in prepared tins for 30 mins.









This cake is delicious and very healthy.

Fresh Tomato Lime Refreshing Drink 



Ingredients

4 Tomato
2 Lemon
8 tsp Honey
350 ml Drinking water (Cold)
Salt, Pepper and Back salt (Kala Namak) to taste
  1. Few Coriander leaves (Chopped)

Method 



First step is to blanch the tomatoes. For this boil water in a pan. Add tomatoes in boiling water and once it starts boiling again turn off the stove.

Drain the water n let it cool for sometime.



In a food processor, puree the tomatoes and strain the puree through a sieve into a pitcher.  Now add salt, pepper, honey, lemon juice and ice water and stir.







Pour the tomato refreshing drink in 4 glasses garnish with finely chopped coriander leaves n serve. 

You can lemon wedges for garnishing .
