Samosa (Indian snacks)

Samosa is maximum sailing snacks in India. It is very popular and everybody's favorite at anytime of the day. I love to eat samosa.
It is very simple to make good samosa at home. You can be sure of taste preference of your family.
Main samosa covering is same, filling can well be made spicy or sour ,veg or nonveg according to taste.


For samosa covering

2 cups or 250 grams flour
1 /2 teaspoon salt
2 tablespoons refined oil
Water to make the dough
Oil for frying

For the filling
5 potatoes boiled and peeled
1 cup peas
1 green chilli chopped
1 inch ginger (finely chopped)
Coriander leaves
1 teaspoon salt
1 teaspoon jira
1 teaspoon red chilli powder
1 teaspoon amchur
1 tablespoon oil

First knead the dough. Take flour in bowl.  Mix salt and oil in the flour thoroughly.
In this oil mixed flour(moyan) add little water and make dough tightly.
Keep it aside.

Heat a tablespoon oil, put jira and green chillies.
Add peas to it and cook them at low heat until becomes soft.
Add finely chopped ginger ,masala,salt and amchur with crushed potatoes in this and cook them for few minutes add chopped coriander leaves and mix and mash the filling.
Let it cool down ,leave it aside.

To make samosa

It includes two steps 1 - making samosa . 2 - frying samosa.
To make samose
Divide dough into ten parts (लोई)
Roll one part, cut into two parts, lift one , put on your left palm ,with a brush or your finger moist ist edges to stick shape.
Place half straight edge over other half to make cone , fill it with potato filling ,stick to close .
Make all twenty samose.
Heat oil in a deep pan or kadai .
When it becomes hot, fry samose in hot oil for some time then reduce it ,let them fry till all of them turn nice golden and crisp.
Serve them hot with tomato sauce and green chatni.
