Dry chicken tastes magical ,if it has perfect flavor ,very juicy and tender inside and soft n crisp outside.
Malai as the name suggests has all the above mentioned things in it. My recipe to make malai kabab is simple and very easy to make.
Malai kabab (chicken)
1 kg chicken (boneless)
10 garlic cloves
1/2 cup dahi
1/2 cup malai
1 teaspoon salt
1 teaspoon (kali mirch, nutmeg ,2 long ground and roasted )
Lots of coriander leaves
Lemon rinds little bits
Crush garlic.
Rub garlic, salt and masala over chicken pieces and leave them for ten minutes.
Beat cold malai with dahi and pour over chicken pieces.
Add finely chopped coriander leaves and lemon rinds also.
In a pan cook them over high heat covered for
eight minutes.
Stirring in between so that it does not stick at the base.
Simmer for two minutes.
Test for tenderness if it is almost done, transfer pieces on baking tray greased nicely and grill them for five minutes or even less just to make outer layer little crisp.
Serve with salads of your choice .
