Do pyaja a special kind of curry

Always heard do pyaja means use equal amount of chicken or lamb to equal amount of onions in the cooking to get really thick and nice preparation of gravy.
We Indians eat spicy and salty dishes with rice or chapati. Something sour is added to balance the sweet ness of onion, mainly dahi.

Mutton do pyaja
Ingredients--
1/2kg meat (goat)
10 onions
3 inch ginger
2 garlic
1 cup sour curd
2 teaspoon garam masala (equal amount of cinnamon, cardamom,1 nutmeg, jeera,javitry,black pepper, cloves and 2 tejpatta)  rosted and ground to make fresh powder.
2 teaspoon salt
2 tablespoon oil

Takes one hour to make.
Serves 6 person
Method- -
Grind ginger and garlic with curd.Marinate meat in it and keep it for 30 minutes.
Chop onions finely.
Heat oil and cook onions at low heat.
In a separate pan cook meat pieces with the marinate for 5 minutes.
Add meat pieces and salt to frying onions at low heat continue to cook, keep it coved,stirring occasionally.
Go on adding the marinate and some water sothat it doesn't stick to the bottom.
Add gram masala on cook till meat becomes really tender.Slow cooking gives best flavour and taste to the gravy and meat.
Serve hot with rice and chapati.
