Khaja is a sweet dish - made in different parts of India. During festivals many sweet dishes are made which have long shelf life and tastes good.
Khaja is one of them.
Khaja -
30 minutes to make
1/2 kg maida
6 tablespoon ghee
3/4 cup water
Oil for frying
2 cup sugar
1/2cup water
Knead maida with 4 tablespoon ghee and water.
Make four parts of the dough.
Roll out thin roties,on 2 roties spread remaining 2 tablespoon ghee and dust some flour.
Cover them with other 2 roties and fold from one end to make rolls.
Cut an inch wide pieces from it.
From the side it shows layers press each one with your palm and roll a bit to make them little bigger.
Heat oil and deep fry them on moderate heat ,four or five at a time.
When all are fried golden and crisp, in a separate big pan take sugar and water.
Cook till sugar dissolved and start crystal starts forming from the edges.
Quickly fold fried khaja in sugar to get sugar coated .
Try making them sweet and salty.
Just add half teaspoon salt at the time of making dough.
